Ketika pada suhu tertentu (disebut sebagai suhu gelatinisasi) tercapai, dinding sel granul memecah dan pati menjadi kental (gelatin).

Ini adalah inti yang terjadi selama proses memasak nasi. Ada dua jenis pati dalam beras, amilsa dan amilopektin. Beras berbulir panjang kaya akan amilosa, sedangakan bulir pendek kaya akan amilopektin. Sifat-sifat nasi yang yang matang sangat beragam, tergantung pada jenis beras atau rasio kandungan amilosa dan amilopektin dalam pati. Jadi, seperti yang kita ketahui, ketika telah matang, beras berbulir panjang tidak terlalu lengket bila dibandingkan dengan beras berbulir pendek.
Selain dari pati, adalah kandungan karbohidrat, beras juga mengandung sejumlah protein dan serat. Sebagai kandungan gizi dalam beras, umumnya mereka terdapat pada lapisan luar butir beras yang disebut dedak (kulit padi). Sayangnya, dedak ini nyaris dihilangkan semua pada proses penggilingan. Inilah mengapa kita harus mengkonsumsi beras coklat (beras dengan kulit padi) bukan beras yang digiling.
